An experiment today. We have had many experiments with BBQ ribs around here but our eldest is mad for pulled pork and, surprisingly, ribs are actually one of the most expensive cuts of meat going. So today is pulled pork day chez nous for under seven bucks. To the right you will see the wee beast, a one kg chunk of pork, in its wet rub - oil, cayenne, chili, fennel seed, bay, dry mushroom, cumin and a drop of smoke. Into the oven at 250º F for a nice slow roast.
We are considering which corn-based breads to make - perhaps even a tortilla. Again, the Dinosaur BBQ book is indispensable.
Update: it all worked out rather well...

Looks great! We're off to Nola's BBQ up at Charlotte or the "Port of Rochester" as it's been called since we got that fancy ferry last year. I feel a little dirty to tell you the truth, like I'm cheating on the Dino. But Nola's got coupons and it's much closer, so we're going to give it a shot. I'll report back if it's any good.
In the meantime, slather on, you magnificent S.O.B.!
