The bakery has been a concern to the conscientious blogger for some time. For the international set, Tim Hortons is one of Canada's corporate and cultural icons which beats Krispy Kreams and Starbucks all to hell: cheap and quality. It is owned by the Wendy's empire and has made some small in-roads into the USA.
If we in Eastern Ontario have had the benefit of the new baking processes, Maritimers have changes to look forward to. Where the apple fritters once (except in PEI - home of the small fritter) were varied in size and shape they now appear standardized and even formed with identical dents. The chocolate tim-bit, once cakey is now glommy. This is not bad if they are warm. It is bad if they are not warm.
